Holy crap I can use Tumblr again! Since my last post, every time I logged in, my computer would freeze up and shut down. I’ve no idea why this was happening, but I’d pretty much given up. But today I thought I’d give it aother try, and great success! So I haven’t really been documenting my food and cooking adventures. But, I have been making an awful lot of ice cream. I found a copy of Hannah Kaminsky’s Vegan A La Mode. I had a mini e-copy a while back and am so glad I now have the full version. Vegan or not, these are by far the best ice cream recipes I’ve ever come across. So far the flavours I’ve made are halva, oatmeal raisin, cheesecake, choc hazelnut, moose/mouse tracks, vanilla, and…. I dont remember what else. I haven’t eaten the choc hazelnut yet, as my lovely friend Michelle is on her way over so we can play ukeleles and she’s bringing vegan brownies to eat with the ice cream. Well, she’d better be bringing brownies, or I wont let her in the house. Just kidding. But I think she knows better than to promise me brownies and not follow through.

Right, so clearly I was a huge failure at March Food Photos. The shame! Being super busy at work and doing tons of cooking (of which I’ve documented nothing. In true procrastinator style, I’ve been far too lazy to charge the camera batteries), and trying to spend as much time with my little family (husband and fur babies) as possible, has not made me want to do anything else very constructive. A good blogger I do not make!
But I digress. One thing of much constructive-ness and importance is helping to organise a vegan bake sale to be held at my work on Saturday 28th April, as part of the Worldwide Vegan Bake Sale, all proceeds of which will be going to Edgars Mission. We’ll be having free tastings of a few Loving Earth products, vegan jelly, bread and dips, flavoured nut milks, and hopefully some Coyo, depending on the supplier (Coyo now use a vegan starter). There’ll be vegan pies & sausage rolls, hot chocolate, chai, and obviously a cake stall, all for sale. So, if you’re in the area, come along, or if you know anyone in the area, please share either on here or use Facebook to invite your friends. The more the merrier, and the more money raised for such a great organisation <3

I just mixed up random amounts of coconut oil, coconut sugar (cream these together first, although they dont really ‘cream’ like regular sugar and nuttelex), wholemeal flour, vanilla extract, and chocolate chips, to make a cookie dough consistancy. Roll into balls and freeze. They wont freeze solid.
